The version of tempeh most people have tried is a sad grey slab from the health food store. Bitter. Weirdly dense. Served at some overpriced plant-based restaurant next to a mound of arugula as if that combination is supposed to make you feel good about your choices.
That's not what tempeh is.
Tempeh is fermented soybeans pressed into a block. The fermentation matters — it breaks down the beans in a way that makes the protein dramatically more bioavailable and gives the whole thing a depth of flavor that raw tofu can't touch. Nutty. Slightly earthy. A little funky in a good way, the way aged cheese is funky. There's actual flavor before you've added anything to it.
But here's the part nobody tells you: tempeh is bitter straight out of the package. You have to steam it first. Fifteen minutes over simmering water, that's it. It opens the texture and kills the bitterness and makes the whole thing absorb marinade like it's been waiting for it.
Then marinate it. I use sesame oil, tamari, fresh garlic, ginger, and a little maple syrup. At least an hour. Overnight is better. The tempeh drinks it up in a way that tofu never quite does.
Then your pan needs to be hot. I mean actually hot — the kind of heat where you get crispy edges and caramelized glaze and some real color on it. That's what makes my Sesame Tempeh Bowl something people keep reordering. Not some special technique. Just heat, a good marinade, and not rushing it.
I don't know why tempeh became the weird one when tofu is everywhere. Nutritionally it wins on almost every metric — more protein per cup, better amino acid profile, actual gut benefits from the fermentation. Texturally it's more satisfying. It holds together. It has presence on the plate.
Try it right once. You'll understand why I put it on the menu.
